Welcome to the forum Soren. Considering the other matches that weekend, I’d expect it to be on Sunday. Spanish teams have stopped playing on Monday this season.
And i just checked what you mentioned about the Europa League, the derby will be played in between both legs of the round of 16. So that’s a guaranteed Sunday fixture.
